Oven-baked fish skewers au gratin
INGREDIENTS (for about 15/20 skewers)
2 kg Squid
1 kg Prawns
500 g Breadcrumbs
Oil
Salt
Herbs (parsley, rosemary) and lemon zest to taste
Wooden sticks
Heat: S series Multibake, 200 °C, 35% top and 35% deck – cooking time 15 minutes.
METHOD
- Clean and rinse the squid in cold water, cut into equal parts 3×3 cm.
- Peel and devein the prawns.
- Thread 1 prawn and 1 piece of squid alternated onto the skewers.
- Place them on a baking tray, season with oil, salt and pepper. Coat in breadcrumbs, flavoured with herbs or lemon zest.
Fish skewers in ventilated or no fan oven
Place the skewers in a baking tray with parchment paper and a drop of oil.
Put in the oven and bake for 15 minutes at 200 °C, 35% top and 35% deck.
