From Italy to the Netherlands, his passion for pizza, coupled with a modern vision of the craft, has given rise to a brand celebrated worldwide for its authenticity, technology, and quality. His journey has led him to become a social media star and open over 30 restaurants both in Italy and abroad. Vincenzo uses Neapolis oven in some of his restaurants, guaranteeing the excellence of contemporary Neapolitan pizza. We have been in his new location in Amsterdam to hear his story. How did your professional journey start, and how did you decide to take your idea of pizza beyond Italy? I come from a family of pizzaioli that spans three generations. Pizza has always been a part of my life, and from a very young age, I grew up learning from my father and grandfather before starting this career early on. I gained experience in Italy and abroad, and eventually, I decided to create my brand. My primary goal has always been to bring my experience and concept of pizza to the world. Tell us about yourself and how you also became a star on social media. Who are your followers? It would be too simplistic to explain it in just a few words. I simply show my passion for pizza and love for my work, sharing my experiences. I stay true to myself, and people appreciate that. I don’t have a specific target audience — my followers span across all generations, from children to adults. What fills me with pride and emotion is always receiving so much affection from children. What is the concept behind your restaurants, and how quickly have you grown? What are your plans for the future? The idea is to let our customers experience our vision of pizza while making them feel at home. In 2020, before the pandemic, we had just one location; today, we have surpassed 30. I have many projects in the works, we are continuously evolving. For example, we recently opened “Don Vince’” in Naples, located on Riviera di Chiaia, a trattoria dedicated to Grandpa Enzo and his recipes, along with pizza ‘a ruota di carro’. I definitely recommend it! In both your Amsterdam and La Spezia (Italy) restaurants, you chose the Neapolis oven from Moretti Forni: why? What influenced your decision the most? For my pizza, the Neapolis oven from Moretti Forni guarantees the same quality and baking experience as traditional ovens in Italy. How easy is Neapolis to manage? What results do you achieve with it? It’s a high-quality and easy-to-manage oven, and as I’ve mentioned before, it grants excellent results. Having worked with other ovens, particularly wood-fired ones, what differences do you notice with Neapolis? Neapolis delivers the same performance as traditional gas or wood-fired ovens. Describe it in three words. Quality, simplicity, and efficiency. Can you tell us something about your location in Amsterdam? As soon as the opportunity to open in Amsterdam arose, we didn’t waste time. The location is stunning and welcoming, around 800 square metres with an outdoor terrace overlooking the canal—it’s straight out of a movie. We’re very excited about this new beginning in the Netherlands and hope to gradually expand across the country. What is the most popular pizza or dish on your menu in Amsterdam? Abroad, the Margherita is obviously the queen, but we’ve received great feedback on all our other pizzas as well. Tell us about the pizza you’re most attached to. For me, every pizza has something special — each one connects to something, which might explain why all our pizzas are so popular among our customers. If I had to name one, I’d say the “Provola e Pepe Campione del Mondo,” with which I won the World Championship. The growth of a brand that has successfully brought Italian tradition to over 30 locations worldwide demonstrates that dedication, attention to quality, and cutting-edge technology are crucial for success.
