Moretti Forni’s technology and quality satisfy all palates
Bondi Beach, one of Australia’s most famous beaches, in early 2022 saw the birth of a new Italian cuisine project, Peperoncino Pizzeria. Among the restaurant offer, pizza, made with serieS deck oven, occupies a prominent place. To know more about this interesting reality, also mentioned by the Best Restaurants of Australia, we interviewed one of the partners, Alfonso Santaniello, the pizza chef who has followed the restaurant since its opening.
Tell us about ‘Peperoncino Pizzeria’ project
After 20 years of experience in the pizza business, I arrived at Peperoncino with a great desire to express myself. Together with my two partners, two Information Technology ‘brainiacs’, we have shaped this project with a naming and logo that may seem a little banal to us Italians, but literally blow the minds of Australians.
We offer our customers a culinary experience of the highest quality, using the finest ingredients to compose our menu which, in addition to pizza, also includes a selection of antipasti, main courses and desserts. Even if not much time has passed since our opening, Peperoncino is already giving us much satisfaction.
In this context, how does serieS fit in?
Every day we bake an average of 150 pizzas of 33 cm Ø, 50 ‘mezzo metro’ pizzas, as well as calzones, bread and focaccia with serieS. We chose it for several reasons. First of all, because of its versatility: we wanted to give our customers a choice of several products. Peperoncino is one of the first places in Sydney to offer a pizza dough made with biga.
Our customers can choose from two different types of pizza, crunchy or contemporary (similar to Neapolitan): thanks to Moretti Forni’s technology and quality, we satisfy all palates. As for toppings, ours are classic pizzas with a ‘gourmet touch’.
Another reason that brought me to Moretti Forni was the goal of being among the best in contemporary pizza and, after working for many years with wood-fired ovens, I knew that only this electric oven could give me the result I was looking for, drying the crust of my pizza to perfection. Besides, as we all know, at busy times with a wood-fired oven it is impossible to work at a constant temperature. With serieS, on the other hand, I decide the percentage and the temperature of both top and deck, so my pizzas are just perfect!
Last but not the least, we chose Moretti Forni through Joe Cassisi, the best oven importer in Australia, a reliable person, always helpful and with a great reputation.
What are your plans for the future?
We want to keep on evolving, in every sense. For now, we are aiming to consolidate our space in the Sydney market, confidently waiting for our boom which, we are sure, will rank us unquestionably among the best in Australia. Peperoncino was created to become a brand, we are already identifying 5 more locations here in Sydney and, next year, we aim to open in another state.
