Soft almond cake with strawberry jelly
INGREDIENTS:
Almond cake batter
Almond paste 97.5 g
Unsalted butter 97.5 g
Granulated sugar 97.5 g
Vanilla bean, split lengthwise & scraped 1
Eggs 93 g
Flour 75 g
Baking powder 1 tbps
Pinch of salt
Sour cream 97.5 g
Heat-Resistant Strawberry Jelly
Strawberry puree 300 g
Simple syrup 85 g
Gellan Gum 6 g
Glaze
Confectioner’s sugar 500 g
Water 100 g
Heat: serieS 170 °C, top 40%, deck 60% – baking time 15/20 minutes.
How to make the almond cake
Batter:
- In the mixer with the paddle attach, beat the almond paste, butter, sugar and vanilla beans until light and smooth.
- Add eggs slowly, mixing between each addition.
- Sift flour, baking powder and salt together over the egg mixture.
- Mix 1 minute on low speed and scrape the bowl.
- Add the sour cream and mix on low speed for 30 seconds.
- Lightly grease the Pavoni cylinder mold and dispense 20 g of batter into each mold.
- Add the strawberry jelly before baking.
Strawberry jelly:
- In a pot, combine all the ingredients and bring to a boil for 1 minute.
- Pour the mixture into a 14×14 cm pan. Let it cool and thicken (45 minutes).
- Once it has set, cut 2 cm diameter discs.
- Store in the fridge until ready to use.
Glaze:
- Combine the ingredients in a bowl.
- Mix until well combined.
- Use the mixture to glaze the almond cakes.
How to bake the almond cake
Preheat serieS to 170 °C. Bake for 15/20 minutes.
Once baked, let the cakes cool in the fridge before removing from the mold.
NB: do not remove when still warm, otherwise they may break.
Garnish with fresh strawberries.
