An essential element capable of creating value for oneself and for others, when by ‘others’ we mean the people in one’s team, the professionals who choose the technologies the company produces, and the territories and eco-systems of which we are all part. There is a strong sense of urgency on sustainability issues, which is why Moretti Forni supports the project CARE’s – The ethical Chef Days, born from an idea of Norbert Niederkofler and Paolo Ferretti in 2016, which combines ethics, gastronomy, territories and innovation in order to preserve a world that requires more and more attention and responsibility. During the event in South Tyrol, from February 29 to March 3, the theme of sustainability will be at the centre, with a special focus on cooking: respect for nature and seasonality, reduction of waste, reuse of scraps, all under the guidance of the moral principle of doing. Participants are committed to ethical practices, constantly monitoring such behaviour and spreading this mentality to future generations. The aim is to contribute to a healthier and more sustainable world, with daily actions, environmental education and collaboration between professionals at national and international level. Moretti Forni regularly analyses and tries to understand, in each of its production phases and in the technologies it supplies, where it is possible to perfect processes and innovations that allow it to continuously improve its sustainability. Already for years, there has been a careful selection of suppliers and certified raw materials upstream, which allows for the elimination of packaging thanks to reusable packaging systems and the use of recycled materials for shipments that significantly reduce the environmental impact linked to the supply chain. In addition, the use of renewable energy sources, the reorganisation of production processes to reduce waste and the adoption of electric company mobility complete the picture of a concrete commitment along the entire supply chain. 90% of the ovens sold are zero-emission, all-electric ovens. The technologies are covered by patents that minimise environmental impact and energy use up to -45% on the X-series ovens. As CEO Mario Moretti states: “Moretti Forni has been investing for years in functional innovation to create more sustainable working conditions: people are at the centre, the machine is at their service.” Sustainability, therefore, has to play a global role, not only on an environmental level, but also in improving the working conditions of the professionals who use these technologies. This commitment translates into a significant reduction in working time, an increase in comfort and a simplification of operations. The future goal for Mario Moretti is clear: “To go even further: to think and design baking technologies that also improve the product coming out of the oven. So sustainability extended to improving the quality of the nutritional and health profile of the products baked in the ovens that our company produces.” A determination to actively contribute to more sustainable and responsible catering, in line with CARE’s objectives.
