At the centre of his Fiata Pizza, a Neapolitan pizzeria in the beating heart of Hong Kong, stands Neapolis, the oven used by the Caserta-born pizza chef to make his pizzas with “75% humidity, 510 °C, 90 seconds and 100% passion”, as we read on his website. To find out more about this interesting project, we caught up with Salvatore and asked him to tell us his story: Tell us about yourself and how ‘Fiata Pizza’ was born I am from Capodrise, in the province of Caserta, and grew up in a family of pizza makers for three generations. I was already working abroad, but I stayed in Europe I arrived in Hong Kong for love, to join my wife. A dear local friend of mine, knowing my skills, proposed that we open a pizzeria together: I was immediately very happy and enthusiastic, because I could finally prove to everyone, especially myself, that I could make it and live this new adventure. How does the choice of Neapolis fit into your business? Several years ago, I worked with Franco Pepe. He was the one who first introduced me to Moretti Forni. Then when the time came to open my own place I had no doubts, I chose Neapolis6 for its excellent performance, especially because in less than 40 minutes it reaches 500 °C and from the first to the last batch the temperature always remains constant. These are huge advantages. Mine is a contemporary Neapolitan ‘pizza canotto’, which I bake for 90-110 seconds. I have an average of 150 pizzas a day but, thanks to recent successes, I have reached 600 pizzas at weekends alone. Now, let’s talk about the eighth position in the 50 Top Pizza ranking: what did it mean for you? It was very exciting! First of all, I didn’t expect to be part of the 50 top just 8 months after opening: when we received their official email, I couldn’t believe what I was reading and it was really very thrilling… Personally, I am happy to have chosen Moretti Forni for this adventure, it is also thanks to Neapolis and its performance that I have achieved this coveted goal, in fact even the Hong Kong social media who told my story compared my Moretti oven to a Ferrari. It has been a difficult but satisfying year: in addition to being in eighth place in the 50 Top Pizza 2022 Asia – Pacific and declared the Best Pizzeria in Hong Kong, we are also in 62nd place in the 50 Top Pizza World 2022, entering among the 100 best pizzerias in the world. After these awards, the changes were not long in coming: we are always full, every day, and on weekends we only take reservations. What are your plans for the future? I would like to open a second shop, still in Hong Kong, although at the moment I am still focused on this one, which is in a very central location: we work really hard and I am the only pizzaiolo, so I have to concentrate on doing even better next year! As I said, Neapolis oven is spectacular and I am ready to buy another one as soon as I can open my second pizza shop.
