But this story unfolds in Italy, where Rocket Truck brings American flavour to the streets. Andrea Bartoccini, co-founder, explains: “We wanted to bring a slice of America to Italy, so we found this vehicle in California, brought it back with us and transformed it into a food truck.” Once inside, the meticulously organised space stands out, the Airstream is optimised for preparing 1,200-1,500 hamburgers daily. To meet this high demand, Andrea and his partners sought the right technology that would balance efficiency and quality. “Everything started during the Jova Beach Party tour. As staff, we were used to handling large numbers but needed an oven that could standardise hamburgers and speed up our process. Thanks to T series conveyor oven, our production is steady, we increased from 800-900 to 1,300-1,500 hamburgers a day. Speed allows us to serve more customers without missing opportunities. Plus, T series enables us to cook safely, delivering identical, perfect hamburgers in no time.” Andrea highlights how once they found the ideal setup, T series was extremely easy to use, even for inexperienced staff: “Just place the hamburgers on the belt and retrieve them at the end of the cooking process.” Operating inside an entirely aluminium-clad Airstream isn’t easy, as it significantly heats the working environment. “Our previous oven further increased the internal temperature. Now, with T series, the surrounding temperature is much lower than before, greatly improving working conditions.” Rocket Truck’s mission is to bring the American hamburger tradition to Italy’s major events, offering high-quality products enhanced by Refining®, which perfectly finishes pre-cooked hamburgers in about a minute, as if freshly made. Andrea shares the menu: “Currently, the Pulled Pork sandwich is the most popular because we chose a simple recipe that appeals to a broad audience. It’s just pulled pork shoulder, mayonnaise, BBQ sauce, lettuce, bacon, and onion. We’re particularly fond of our Chicken sandwich because we rarely find one that’s as simple and delicious as ours, made with just grilled chicken, cheese, lettuce, mayonnaise, and guanciale.” But Rocket Truck isn’t limited to burgers. The versatility of T series allows them to cook a wide range of products, adapting to the specific needs of each event. Andrea reveals that they will soon participate in an event where traditional hamburgers won’t be an option, and they are already testing Refining® for piadinas. Andrea’s enthusiasm is evident when he says, “Honestly, I love it because T series has radically changed the way we work. It’s incredibly easy to use: that oven saved us!
